Tonight we’ll making mint sauce and drying the rest out for tea. Apple mint is delicious brewed on its own or a couple of leaves added to ordinary black or green tea with honey to taste.

The first Elder flowers of the season were just starting to bloom so a couple of handfuls of those will be deep fried in a light batter and drizzled with organic honey. If you’ve not tried it, you should. Very healthy too.
